Lemon Blossoms - Michelle Wiles

LEMON BLOSSOMS

Ingredients
1 BOX YELLOW CAKE MIX        

1 SMALL INSTANT LEMON PUDDING MIX

4 EGGS

¾ CUP PLUS 3 TABLESPOONS OIL

4 CUPS POWDERED SUGAR

1 TABLESPOON LEMON ZEST

1/3 CUP LEMON JUICE

3 TABLESPOONS WATER

Directions
COMBINE THE FIRST THREE ITEMS WITH ¾ CUP OIL. BEAT 2 MINUTES. 

SPOON ½ TEASPOON BATTER INTO EACH SECTION OF A MINI MUFFIN PAN.

BAKE ON 350 DEGREES FOR 8 MINUTES.

SIFT POWDERED SUGAR, ZEST, LEMON JUICE, AND 3 TABLESPOONS OIL INTO WATER

STIR UNTIL SMOOTH.

DIP EACH BLOSSOM INTO GLAZE WHILE STILL WARM.
