Bacon Potato Salad - Michelle Wiles


BACON POTATO SALAD

Ingredients
3 POUNDS POTATOES

1 BAG REAL BACON BITS

¾ TEASPOON SALT

¼ TEASPOON PEPPER

2 TABLESPOONS DICED PIMENTO

½ CUP MAYONNAISE

½ CUP SOUR CREAM

Directions
PEEL POTATOES AND CUT INTO CHUNKS.

COOK IN BOILING WATER UNTIL TENDER. DRAIN AND LET COOL SLIGHTLY.

PLACE POTATOES IN A LARGE BOWL.

ADD BACON BITS, AND NEXT 3 INGREDIENTS.

STIR TOGETHER MAYONNAISE AND SOUR CREAM UNTIL BLENDED.

POUR OVER POTATO MIXTURE, TOSSING GENTLY TO COAT. 

COVER AND CHILL FOR AT LEAST 1 HOUR.
